Our friend Brooke created such a fun fall recipe using Coachella’s Best Organic Medjool Dates that we just had to share it with you all. This is a perfect dessert for your holiday guests, or just a snack while you’re running around holiday shopping!
Ingredients:
- 1 cup of Coachella’s Best Organic Medjool Dates (remove the pits)
- 1 and ½ cups pecans
- 3 cups of cereal rice crisps
- ½ cup cashews
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- 1 pinch of salt
Directions:
- Add the Medjool Dates, nuts, vanilla, cinnamon and salt to a blender and blend until a smooth paste is formed
- Add mixture to a small saucepan and warm over low heat
- Pour warm mixture over the rice cereal crisps and mix well
- Add to a baking pan and spread out evenly
- Let it rest in the fridge for 30 minutes
- Cut into squares and top with pecans
- Bonus option: drizzle white chocolate or coconut butter over the top
