Maamoul Date Cookies

After a long day of fasting during Ramadan, treat yourself to a sweet reward: Maamoul Date Cookies.


Maamoul are traditional shortbread-style cookies filled with a naturally sweet center. While they can be filled with pistachios, walnuts, or figs, our favorite version is filled with organic dates. These beloved Middle Eastern cookies are a staple on Ramadan dessert tables and are often shared with family and friends after iftar.

Our Maamoul Cookies, made with Coachella’s Best Organic Medjool Cooking Dates, are meant to remind you that although fasting requires patience and discipline, it is followed by moments of sweetness and reflection. One of the most distinctive features of maamoul is the beautiful pattern pressed into each cookie using a traditional wooden mold. While authentic maamoul molds can be found online or at international markets, a simple fork works just as well to create a decorative design.

Maamoul cookies are not only visually stunning, but irresistibly delicious—effortlessly stealing the spotlight on any dessert platter. They are the perfect treat to enjoy and share during Ramadan celebrations.

Ingredients For the Dough

½ cup ghee or butter

¼ cup light olive oil

2½ cups all-purpose flour

2 tbsp sugar

2 tbsp rose water or orange blossom water

2 tbsp milk

For the Date Filling

⅔ lb Coachella’s Best Organic Medjool Dates


Directions

1. Preheat oven to 350°F.

2. Melt the butter or ghee. Add the oil, then mix in the sugar.

3. In a large bowl, combine the butter mixture with the flour, working it together with your fingers until crumbly.

4. Add the rose water or orange blossom water. Then add the milk, one tablespoon at a time, kneading until a soft, pliable dough forms.

5. Cover and let the dough rest for 30 minutes. Roll into smooth, evenly sized balls.

Prepare the Date Filling
6. Remove pits from the dates and finely chop.
7. Process the dates in a food processor until they form a smooth paste.
8. Roll the date paste into balls the same size as the dough balls.

Shape the Cookies
9. Flatten a dough ball in your palm, place a date ball in the center, wrap the dough around it, and seal. Gently flatten into a disc.
10. Press into a maamoul mold to imprint the design, or use a fork to create a pattern.
11. Place cookies on a baking sheet and bake for 15–20 minutes, until just set (do not brown).
12. Allow to cool completely before serving.
